The Remember When Grilled Sandwich
All you need:
- A splash of Olive Oil
- A 250g packet of Bacon
- 200g Klein Rivier Gruber
- 200g Mature Cheddar
- 250g Mozzarella
- 190g Smoked Cheddar
- 250g Salted Butter
- A fresh loaf of Stone Ground White Bread
- A small handful of chopped Garlic Chives
- 1tsp Paprika
- Your Pastry Brush
- Tin Foil
- Braai Grid
How to:
- Heat the Olive Oil in a frying pan over low to medium heat
- Add the Bacon, fry till crisp and golden brown
- Once fat is rendered off drain on a sheet of kitchen towel
- When Bacon is cooled down, use a large knife to cut into small chunks
- Grate the cheeses and set aside separately
- In same pan as the rendered fat, melt the butter and stir to combine
- Slice eight handsome slices of the Stone Ground Bread
- Tear four sheets of foil large enough to be able to close around each sandwich
- Place two slices of bread on each
- Spread the butter bacon mix on both sides of the bread using your pastry brush
- Layer each slice of bread with two of the cheeses and sprinkle with chives
- Season the sandwiches with salt, a grrrts of pepper and two shakes of Paprika
- Wrap and seal each sandwich in its foil covering
- Braai over medium coals for 10 minutes, turn often to help the cheese to melt
- Check on the cheese, if need be put back on the fire for a runny cheese melt
- Unwrap when done, braai 10 minutes over coals for smoky flavour and until golden brown
- Serve with a glass of her choice. Kaalvoet? Kleinboet? Bloos? Your choice.
